Aussie-style potato wedges
Crunchy, perfectly seasoned wedges, they’re part of many pub menus throughout Australia. Just as ketchup is the popular choice to serve with fries in the US, sour cream & sweet chili sauce are the preferred condiments to serve with wedges in my homeland. I like mixing them together, some dip into the chili sauce then into the sour cream. Both are excellent. Eaten on their own as a snack or sereved alongside grilled meats, burgers or roasts – delicious! I like to use russet potatoes – the dirt brushed potatoes but, Idaho, Yukon Gold & Maris piper, also good.

- 1 1/2 teaspoons paprika
- 1 1/2 teaspoons garlic powder
- 1 teaspoon chicken bouillon powder
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper
- 3/4 tsp onion powder
- 2 tablespoons olive oil
- 2 1/2 lbs russet potatoes, scrubbed clean, leave skin on golden potatoes can also be used
- 1/2 cup sour cream, approximately
- 1/2 cup Thai sweet chili sauce, approximately
Preheat the oven to 450°F (230°C). Grease a baking sheet with parchment paper.
Mix paprika, garlic powder, bouillon, onion powder, salt & pepper together in a large mixing bowl. Add the oil & stir until well combined.
Cut each potato in half then cut each half into 4 wedges for 8 wedges. For smaller potatoes you might cut them into 6 wedges per potato. Add the wedges to the mixing bowl. By using a large mixing bowl to mix you're assured of each wedge being well coated in the spice & oil mixture.
Arrange wedges, one cut side down on the baking sheet. Bake for about 45 minutes, turning once during cooking to the other cut side, until the wedges are browned & crispy.
Serve immediately to maintain their texture & serve with small bowls of sour cream & chili sauce or if you’re feeling adventurous, combine the two to serve as wedge dip. Serves 6.
