Greek-Inspired One-Pan Tomato Shrimp
Greek-Inspired One-Pan Tomato Shrimp is one of those meals you need when you want to produce something nutritious and delicious fast. If you buy the shrimp already peeled and cleaned, it makes the meal come together even faster. The usual suspects: onion and garlic team up with white wine, fresh cherry tomatoes, olives, capers, lemon and basil. Fresh and summery making it perfect for those hot days.

- 20 to 24 raw, jumbo shrimp, peeled and deveined
- pinch salt and freshly ground black pepper
- 3 tablespoons olive oil, divided
- 1/2 cup diced white onion
- 4 garlic cloves, minced
- 1/3 cup dry white wine
- 6 oz cherry or grape tomatoes, halved
- 1/4 cup pitted kalamata (or green olives)
- 1 1/2 tablespoons small capers roughly chopped if larger
- 1/4 cup chicken broth
- 2 tablespoons lemon juice
- 3 tablespoons roughly chopped basil plus extra leaves for garnish
- 2 tablespoons roughly chopped flat leaf parsley
Sprinkle the shrimp with salt and pepper. Heat half of the olive oil in a large, non-stick pan over medium-high heat. Cook the shrimp for 3 to 4 minutes, stirring occasionally, until just pink; remove from the pan and set aside.
Add the remaining oil to the same pan. Heat over medium-high. Add the onion and cook, stirring occasionally, for 7 minutes or until softened. Add the garlic and cook for 1 minute until fragrant.
Add the wine and simmer, scraping any bits off the bottom of the pan, until half of the wine is evaporated (this is to cook lessen the harsh alcohol taste).
Add the tomatoes and cook, uncovered, for 5 minutes, stirring occasionally, until the tomatoes are starting to soften.
Add the olives, capers and broth. Simmer, uncovered, until about half of the broth is evaporated.
Add the cooked shrimp back to the pan with the lemon juice, basil and parsley and stir to combine. Cook for about 2 minutes until the shrimp are hot and cooked. Do not overcook. Serve with steamed or roasted broccolini or pasta, if desired. Serves 4.
