pumpkin brownies
This brownie recipe is gluten-free, sugar-free and so simple to make. The pumpkin and pure maple syrup help to sweeten the brownie and add to its fudginess. It’s rich enough you only need a small slice with a cup of tea or coffee to satisfy that mid-afternoon sweet craving. Cut the brownie into individual squares and wrap in some non-stick paper or plastic wrap and freeze. Now you have a treat on hand for days when your cravings get the better of you – it happens to us all from time to time. Chopped dried cherries or whole raisins would be a nice addition to this brownie – about 1/2 cup. The remaining pumpkin puree can be frozen and added to soups and stews.

- 1 cup pumpkin puree canned or homemade
- 1/2 cup peanut or almond butter
- 1/3 cup pure maple syrup or sugar-free
- 1/3 cup cocoa powder
- 1 large egg
- 1 teaspoon vanilla extract
- Pinch sea salt
- 1 cup dark chocolate chips or chopped dark chocolate of your choice such as lindt
- 1/2 cup pepitas
Preheat the oven to 350°F (180°C). Grease and line an 8 x 8-inch (20 x 20cm) baking pan with parchment paper.
Combine the pumpkin, peanut butter, syrup, cocoa powder, egg, vanilla and salt in a medium bowl; stir until well combined.
Add all but 2 tablespoons of the chocolate chips and all but 2 tablespoons of the pepitas; stir until well combined. Spread into the prepared pan. Sprinkle with the reserved chocolate chips and pepitas. Bake for about about 30 minutes or until set. Let cool completely in the pan before slicing. I prefer to serve this cold ,so I store it in the fridge until set then I slice it. To store, wrap each piece individually in plastic wrap before freezing. Makes 9 squares.
