Pork Souvlaki with Fattoush and tzatziki is a perfect summery meal: the pork is marinated in a lemony garlic mixture then grilled until charred and succulent. I like to serve this with a vibrant Middle Eastern salad of cucumbers, herbs, tomatoes and crisp shards of pita tossed in a lemony dressing called ‘fattoush’. Then dollop creamy tzatziki alongside and dinner is served. Now I’m not making any claims to authenticity here: a pork recipe from Greece, a salad from the Levant area in the Middle East (Lebanon and Syria) and tzatziki from Turkey, although is now commonly know as a Greek condiment – all this made by an Aussie who lives in America. That my friends in the wonders of food: it might be known for its borders but recipes are shared worldwide. Aren’t we lucky we live in a world, a country, that embraces multiculturalism so we can eat delicious recipes such as these?!
