Pizza purists look away. Pizza Frittata while not a traditional pizza, has ingredients you might add to a pizza: pork sausage, peppers, tomatoes, herbs & cheese. So you’ll get the flavors without the faffing about with dough or the higher carbs (not that there’s anything wrong with a good homemade pizza crust). Serve warm or cold with a simple salad. Frittata, an Italian egg dish, has morphed from its original inception. Make it plain simply with cheese & eggs. Or try something more robust such as this Bacon, Potato & Cheddar Frittata. Experiment, see what you have on hand in your fridge or pantry – pesto & artichokes sound good; corn & chorizo; roasted pepper & tuna – whatever you choose, just remember to avoid high water containing ingredients. I avoid tomatoes, unless, like Pizza Frittata, they’re sundried. Pick three or four ingredients, not forgetting fresh herbs, and make a frittata your own.
