Cooking for yourself & others is a privilege denied to many. It’s too easy when you’re tired, stressed or busy – usually all three, & go out or order takeaway. I live on the outskirts of a tiny town in the country so takeout is never an option. That’s why it’s wise to plan your meals – saves on wasting food & money so you have some simple & easy meals that are satisfying & delicious in your recipe arsenal. So here are five easy meals for your weeknight dinner.
Ginger Anise Chicken is a throw together meal that requires minimal effort. Get everything in the pot & let is simmer until tender. Serve it up with some steamed rice & steamed Asian greens or veg or your choice.

Pizza Frittata tastes like a pizza, smells like a pizza without the take out. Frittatas always make good, quick meals. I like to serve this simply with a garden salad.

A stir-fry, while there might be a little chopping involved is essentially a very quick meal. Have everything ready, some rice or noodles already cooked & in a few minutes you can have dinner ready. Hoisin Beef & Snow Pea Stir-Fry is so good you’ll want to add this one to your arsenal. Make it as the recipes says the first time & then get creative when you make it again, switching out the vegetables & proteins for other similar ingredients.

I think everyone despises cleaning up the dishes after cooking. That’s why pan meal recipes are a must to have on rotation. One Pan Lemon Shrimp & Zucchini Orzo is so good – minimum washing up. And the oven does all the work for you.

Because stir-fries make such speedy meals I had to add another one, this time a delicious recipe from Thailand: Chicken Thai Basil Cashew Stir-Fry. One of the most popular recipes on my old site & with good reason. So quick with lots of fragrant Thai basil & little to no fuss.

So grab your shopping list & start planning. Your week will run more smoothly knowing you don’t have to think about what’s for dinner. And it will be healthier for you too.
