Now I know a baked potato is nothing new but… have you eaten a baked potato cooked in an air fryer? If you make potatoes this way, you’ll never go back to the oven method. This is a simple recipe, but if you love potatoes as I do, you’ll want to save this. Not only is it a faster method – cooking the potatoes in half the time, but it makes them deliciously crispy on the outside while staying fluffy inside. It’s now my favorite way to cook baked potatoes. I serve these with grilled meat – especially a good rib eye steak or roasted chicken. These are even good cold the next day eaten as-is or chopped up in a garden salad. I count a serving size as half a potato but you do you.

- 3 strips bacon
- 3 russet potatoes, halved lengthways
- 1 tablespoon olive oil or use bacon fat
- 1 teaspoon garlic & herb seasoning I use Dash salt-free or use lemon pepper seasoning
- A good pinch sea salt & freshly ground pepper
- 3 tablespoons cold butter, cut into little pats
- 3 tablespoons sour cream or plain Greek yogurt
- 2 tablespoon chopped chives
- 3 tablespoons fried onions (such as French’s)
- To cook the bacon in the air-fryer, place the bacon in a single layer in the air-fryer and cook at 400°F (200°C) for 7 minutes or until the bacon is crisp. Finely chop bacon. Clean out the air fryer drawer if you’ve cooked the bacon, reserving any bacon fat if you want to use bacon fat to toss the potatoes instead olive oil.
- Toss potatoes, olive oil or bacon fat, seasoning, salt & pepper together in the air-fryer or a medium bowl. Arrange cut side down in the air-fryer drawer. Cook for 15 minutes. Turn and cook for another 6 to 8 minutes, depending on the size of each potato. The timing varies between brands or air fryers & potato sizes.
- Add a little bit of butter to each potato half. Add a dollop of sour cream, sprinkle bacon & the chives onto each potato half. Sprinkle with a little more salt & pepper.
