peach lassi

  • 2 large ripe peaches peeled & halved, partially frozen if possible (this is about 2 cups chopped)
  • 1 cup plain yogurt 240 to 250ml (use whole milk, low fat or coconut yogurt)
  • 1/2 cup cold milk 113 to125ml – I use almond but coconut or regular milk will work
  • 3 tablespoons sugar 45ml (I use monk fruit sugar), or honey
  • 1 tablespoon lemon juice 15ml
  • A splash of vanilla or a pinch ground cinnamon optional
  • Tiny pinch salt
  • 1 cup crushed ice optional*
  • Add all ingredients to a large, high-powered blender; blend until completely smooth. Pour into chilled glasses & serve immediately.

Notes

Adding ice will dilute the flavors somewhat but ice is great if you want the drink very cold & slushy-like.
